Toasted Coconut and Cinnamon Banana Boat

• ½ banana, sliced long-ways
• 1 Tbsp. cinnamon
• ¼ c unsweetened coconut flakes
• 1 tsp. agave nectar
• 2 Tbsp. peanut butter
• ½ tsp. coconut oil
• Vegan dark chocolate chips

Begin by using the coconut oil to pan sear the banana in a nonstick pan—be careful when flipping the warm banana as it will break easily. Once the edges of the banana begin to brown, remove it and immediately start toasting the coconut flakes in the same pan. While waiting for the flakes to turn a light brown color, sprinkle the banana with cinnamon and add small scoops of peanut butter on the top. Drizzle with agave and garnish with desired amount of dark chocolate chips. Lastly, scatter the toasted coconut flakes on top of your delicious creation. Best served warm! Recipe makes one serving.
