If you’re like me, the holiday season brings the joys of discerning the “safe” holiday foods from those that will leave you feeling like a bloated whale ready to go belly up. Although I do love the occasional indulgent peanut butter ball, I prefer to know that at least some of the foods adorning the table on Christmas Eve are “Claire-approved,” as my friends and family would say. This is why, for the next few days, I’ll be posting (mostly) vegan, healthy modifications to some of my holiday favorites!
